	5.40.x Lard Lard comes from the fat surrounding the stomach and kidneys. The best quality is obtained from pig, but it can also come from sheep and cattle. 5.40.x Suet Suet is fat prepared from the kidneys of oxen and sheep. 5.40.x Dripping Dripping is fat separated from meat during cooking and then strained or clarified.
